marine enzymes are used both for process improvement and as well as to develop new processes and products. In the present review the role of relevant types of enzymes for the food sector is described on those enzymes from marine that are put into context. The information provided is related to the novelty concern by the use of marine enzymes based on the scope of the food sector, some processes have reached commercial status. Moreover, there is a vast field of resources for enzyme activity which is explored based on the marine process articles and journals that are used in various fields of aua culture and fishing.
